Recipe: Yummy nice and soft lemon cookies

nice and soft lemon cookies. Partially because most lemon cookie recipes look lackluster in the lemon flavoring department, look too cakey for my liking, or look too flat and wimpy. To keep the cookies soft and dense, there's a tablespoon of honey in the dough. Honey is hydroscopic (attracts water) so it helps the cookies stay.

  5. You need 1 tsp of lemonade powder (I used kool aid brand).
  6. It's 1/2 tsp of lemon extract ( I used Badia brand).
  7. Prepare 1 3/4 cup of all purpose flour.
  8. You need 1 tsp of baking powder.
  9. Prepare 1/4 tsp of salt.

As in, I think of one idea, then I think of another, and ohhhh look another idea and sometimes recipes get lost. Bursting with flavor thanks to using fresh lemon juice and zest! Fresh lemon juice and zest is where the lemon flavor is coming from. Trust me it will give enough flavor.

  1. Cream butter and sugar..
  2. Gather the rest of ingredients. Measure out your flour, salt and baking powder in a bowl...
  3. When your butter and sugar is light and fluffy add the egg, milk, lemon extract and lemonade powder.Beat well..
  4. Using a spatula add the flour mixture one third at a time ~~mixing well to combine after each addition.
  5. Cover and refrigerate for 30 minutes ..
  6. Preheat oven at 350 ºF~~~Take the dough out of the fridge..
  7. Roll into 1 to 1 1/4 inch balls --here u can get creative --I used a floured kitchen scissors and snipped the top of mine and added a piece of maraschino cherry.
  8. Or you can flatten them and roll the sides with coloured sprinkles. Place them 2 inches apart on a parchment lined baking sheet..
  9. Bake for 12 - 14 minutes ... Take out and cool on wire racks ..

Other than the lemon the ingredients are similar to regular cookie dough. Glazed lemon cookies - soft baked sugar cookies topped with a fresh lemon glaze. The perfect light and sweet dessert for Spring & Summer. Add a teaspoon of water at a time, until you reach a nice and smooth glaze. Drizzle on top of the cookies.
