  1. You need 2 of Potatoes large.
  2. It's 2 - 3 tablespoons of Oil.

  1. Peel and wash potatoes really well..
  2. Julienne cut - cut the potatoes into french fries shape (cut the potato in half. Cut each half into large wedges. Then cut each wedge into 2 or 3 french fries shape).
  3. Soak all the pieces in cold water for a minimum of half hour (you can also close the container place in the fridge overnight).
  4. Drain out the water completely. Take a clean kitchen cloth and place all the potatoes in them and gently dry them. Get them as dry as possible..
  5. Meanwhile, grease a baking sheet well. Preheat the oven along with baking dish in it at 200 C..
  6. Place the potatoes on a microwave safe bowl and microwave for 5 minutes on medium power until the potatoes are partially cooked ** (If you don't have a microwave boil the potatoes in water for 4 minutes and drain out the water and dry the potatoes as well as you possible can).
  7. Add 2-3 tablespoons oil and mix well..
  8. Get the hot baking pan out and place each fry separately on it. Don't dump them all at once or they will steam instead of getting crunchy. Spread out as best as you can..
  9. Bake on one side at 200 C for 20-25 minutes or until the fries start turning golden brown..
  10. Remove the baking dish and carefully flip each fry. Continue to bake on the other side for 15-20 minutes..
  11. Get the fries out onto a clean bowl and add salt to taste and spices as per your preference..
  12. Serve hot with ketchup or any dip of your choice!.
  13. Potatoes - I personally think those huge Russet potatoes work the best. But it really is a personal choice. Especially in countries where there really aren't any different "types" of potatoes to choose from, choose the largest potatoes available with your vegetable vendor..
  14. Oil - preferably Regular vegetable oil that has no smell is ideal. Using something like olive oil can make your fries a little over-powering. But if the smell doesn't bother you, use whatever oil / butter / fat you like.
  15. Getting rid of the starch - To get that super crunchy outer texture, you need to make sure you get rid of as much starch as possible from the potatoes. This is why most recipes call for soaking the potatoes in cold water for 30 minutes. If you want to be prepared, I suggest you cut the potatoes into fries and wash really well.. then soak in water for as long as you can..
  16. Pre-cooking the potatoes - This would save you a lot of electricity, trust me! Potatoes can take upto 1-1.5 hours to bake in the oven at 200 C / 400 F if they aren't pre-cooked. Once you cut the potatoes and soak them for some time, I suggest microwaving them for 5-7 minutes to just get them partially cooked. This way, you can bake them for lesser time. If you don't have a microwave, you can also bring some water to a boil and let the potatoes cook for 4-6 minutes..
  17. Bake vs Fry - You'll never notice the difference. My version of baked french fries are as good as the fried ones, minus all the extra fat from deep frying. Baking takes longer than simply frying the fries; but think about all the good you are doing by avoiding the extra oil! If you are in a hurry or want to make a huge batch for a party, then go ahead and fry them up! Just follow all the steps up to the baking part and fry in oil..
